For dinner I made a tapasy sort of meal, mainly because I thought the espinacas con garbanzos dish I sometimes make (inspired by the one they serve at Goya, our neighbourhood tapas place) would be good for Erika. I think it's probably pretty nutritious - protein from the chickpeas, vitamin C from the tomatoes and iron from the spinach - and I made it wihout any oil or salt for Erika's benefit. It didn't look quite as appetising once it had been blended, but Erika seemed happy to eat it nonetheless.
